Take 2 Options

Layer leftover Charred Chicken Chile on Tortilla chips with veggies, Jack cheese & jalapenos for Nachos
Serve extra Tzatziki with veggies or warmed pita as a snack
Freeze two 1/2 cup portions of the Peanut sauce to use for a quick salad in a future week or as a dipping sauce for veggies

Shopping List

  • 1 lb Carrots
  • 2 Cucumbers
  • 1 Bell pepper, yellow or red
  • 1 bag Radish sprouts
  • 1 bunch Scallions
  • 5-6 Jalapeno
  • 4 Hot chilis
  • 1 Shallot
  • 1 Large White onions
  • 1 small bag Sugar snaps
  • 1 bunch Cilantro
  • 10 Roma tomatoes
  • 1 head Garlic
  • couple of inches Fresh ginger
  • 1 lb Mixed greens
  • 2 lbs Boneless, skinless chicken thighs
  • 6 Oz Tuna
  • 1 15 Oz Can Black beans
  • 2 15 Oz Cans Chickpeas
  • 1 17 Oz Can Creamed corn
  • 2 Cups Chicken Broth (I use Pacific low sodium)
  • 1 small can Chipotle in adobo
  • Generous cup Marinated gigante beans (Divina makes an awesome bean)
  • 1 lb Buckwheat or whole wheat fettucini
  • 2 Cups Peanut butter smooth, unsalted
  • 5 Ciabatta or other hard Italian style rolls
  • 1/4 Lb Provolone Cheese
  • 2 Cups Plain greek yogurt
  • 1/2 Dozen Large eggs Cage-free, vegetarian fed
  • 1 Cup Cheddar Cheese, grated or grate at home
  • 1 Qt Buttermilk (Recipes call for 3 cups)
  • 1 Stick Unsalted butter
  • Oils to have on hand: 2/3 Cup Olive oil, 2/3 Cup Canola oil, 1/2 cup Sesame oil, 2 Tbsp Chili oil
  • Condiments to have on hand: Soy sauce, Rice wine vinegar, Red wine vinegar, black tea (2 bags), Maple syrup, honey
  • Spices to have on hand: garam masala, 1/4 cup chili powder, dill, sea salt, pepper
  • Baking supplies to have on hand: 1 1/2 Cups yellow cornmeal, 1 cup rolled oats, 1 cup raisins or currants, 2 cups whole wheat flour, 3/4 cup brown sugar
